Thandukeerai Cookies / Thotakura Ginjalu Cookies / Rajgiri Cookies

INGREDIENTS:

  • Ragi Flour-1/2 cup
  • Rajgira Flour-1/2 cup
  • Sugar-1/2 cup
  • Butter-1/4 cup
  • Cinnamon Powder-1 tsp
  • Tutti Fruti-2 tbsp(Optional)
  • Butter-1/4 cup
  • Honey-2 tbsp(Use as needed)
  • Flax seed Gel-Flax Seed Powder-1 tbsp+Water-3 tbsp(Luke warm)

 STEPS:

1.Measure all ingredients and keep them ready.                                                                                                                           2.In a pan dry roast ragi and rajgira flour and store them in an right container and use for a week.

3.In a mixing bowl add butter and mix it with sugar.

4. When they are mixed well blend them with flax seed gel.

5. Now add the flour and knead them to a dough.You can add honey to make the dough to the right consistency.  

6. Wrap the dough in a cling wrap and refrigerate for an hour.          

7.In the mean time pre heat the oven/Stove for 10 minutes at 170 degrees C.

8.After refrigeration flatten the dough to 1 cm thickness and use cookie cutters to make required shaped.

9.Carefully place them on the tray and bake at 170 degrees C for 10-15 minutes.                   

10.Cool them well and before you munch the crunchy healthy cookies.    

NOTE:

  • You can use refined sugar/powdered jaggery/palm sugar instead of cane sugar.
  • You can skip honey and add some warm water or milk to reach the dough thickness.
